Bring a large pot of generously salted water to a rolling boil. Add the pasta and cook for 9–11 minutes, stirring occasionally, until al dente. Dried pasta takes longer than Val’s fresh pasta (which cooks in 2–3 minutes). Taste a strand before draining, then toss immediately with your sauce.
Store sealed in a cool, dry pantry. Unopened bags keep well for several months. Once opened, reseal tightly and use within a few weeks for the best texture. No refrigeration required.
