Mafaldine
“Little queens.” A beautiful long noodle. Similar to fettuccine, but with the ruffled edges of a lasagna sheet! Holds up well to sauces. Originating in Naples named after the Princess Malfada of Savoy.
Pappardelle
Translates to “gobble up!” Long wide noodle traditionally made with egg and paired with rich hearty Bolognese.
Rotini
Springy short noodles perfect for pasta salads or pasta bake. The grooves hold sauce very well.
Campanelle
“Little bells.” An elegant ruffled bell shaped pasta. Similar to Rotini can be used in pasta salads or other pasta dishes
Bucatini
Similar to spaghetti, but with a hole in the center of it. Like a straw it slurps up sauce well! the traditional Roman Cacio e Pepe recipe always calls for this or spaghetti.
Fettuccine
A noodle similar to tagliatelle, but thicker. Holds up well to meat sauces, but is mostly known to be used in the table side Roman dish fettuccine Alfredo.
creste-di-gallo
A beautiful elbow shape. The shapes name translates to coxcomb and often served with chicken in Tuscany. I love this in a cheese sauce or garlic and oil.
